Spicy White Bean And Avocado Dip

A tasty spin on guacamole, whip it up to serve with bread or veggies.
  Ripe avocados 2 (pitted and peeled)
  Drained, canned white cannellini beans 1⁄2 Cup (8 tbs)
  Minced garlic cloves 2
  Minced jalapeno 1 Teaspoon
  Chopped cilantro 1⁄4 Cup (4 tbs)
  Chopped mint 1⁄4 Cup (4 tbs)
  Lime juice 2 Teaspoon
  Olive oil 1 Teaspoon
  Salt 1 Teaspoon
  Freshly ground pepper 1⁄2 Teaspoon

Place the avocados, white beans, garlic, and jalapeno in a mixing bowl. Mash with a fork until chunky. Fold in the cilantro, mint, lime juice, olive oil, salt, and pepper.

This came out of one of my favorite CIA books. For a different twist, roast the garlic before adding or try switching out some of the spices for whatever you have fresh on hand. Refrain from adding tomatoes as they'll make the mixture watery - but, if you MUST, core the tomatoes first and use only the firm meat.
