Herbed Cheese and Cucumber Dip
|Finely chopped english cucumber||1⁄2 Cup (8 tbs) (Unpeeled)|
|Danish cream cheese with herbs and pieces||4 Ounce|
|Light sour cream||1 Cup (16 tbs)|
|Danish blue cheese||1 Tablespoon, mashed|
|Pepper white||To Taste|
1. Allow cucumber sprinkled with salt to stand for 10 minutes. Using paper towels, squeeze out excess moisture.
2. Take a food processor or mixing bowl, pass milk and cream cheese and blend to a smooth mixture. Blend in blue cheese, chives or dill, sour cream, and pepper. Keep in the refrigerator till served.
3. Take out, fold in cucumber and serve as dip with raw vegetables.
