Curried Egg Dip
|Soured cream||2 Tablespoon|
|Curry powder||1 Teaspoon|
|Hard boiled eggs||2 , finely chopped|
|Chopped parsley||1 Tablespoon (Plus Some For Garnish)|
|Lemon juice||2 Teaspoon|
Beat together the soured cream, mayonnaise and curry powder; then beat in the eggs and parsley, season with salt and pepper to taste and add sufficient lemon juice to give a dipping consistency.
Turn the dip into a small bowl and cover with cling film.
Chill for at least 2 hours.
For serving, place the bowl in the centre of a large plate, sprinkle the dip with curry powder and chopped parsley and surround with tortilla crisps.
