Shrimp Cucumber Dip

Ingredients
  Canned shrimp 4 1⁄2 Ounce (1 Can)
  Cucumber 1 Medium
  Creamy cottage cheese 1 Cup (16 tbs)
  Finely chopped onion 2 Tablespoon
  Vinegar 2 Teaspoon
  Prepared horseradish 1⁄2 Teaspoon
  Vegetable dippers 1 Cup (16 tbs)
Directions

Drain shrimp; set aside 2 for garnish.
Coarsely chop remaining shrimp; set aside.
Cut unpeeled cucumber in half lengthwise; remove seeds and discard.
Shred enough cucumber to make 1 cup; drain well.
In a small mixer bowl combine the shredded cucumber, cottage cheese, onion, vinegar, and horseradish.
Beat till smooth using electric mixer.
Stir in chopped shrimp.
Spoon into serving bowl; garnish with reserved whole shrimp.
