Party Spinach Dip
|1% low fat cottage cheese||12 Ounce (1 Carton)|
|Frozen chopped spinach||10 Ounce (1 Package)|
|Canned water chestnuts||8 Ounce, drained and chopped (1 Can)|
|Low fat sour cream||1⁄2 Cup (8 tbs)|
|Dry vegetable soup mix||1⁄4 Cup (4 tbs)|
|Onion||2 Teaspoon, grated|
|Lemon juice||1 Teaspoon|
1. Position knife blade in food processor bowl; add cottage cheese. Process until smooth, scraping sides of processor bowl once. Transfer to a bowl.
2. Drain spinach; press between paper towels until barely moist.
3. Add spinach, water chestnuts, and remaining ingredients to cottage cheese; stir well. Cover and chill at least 3 hours. Serve with melba rounds or raw vegetables.
