Party Spinach Dip
|1% cottage cheese||12 Ounce (1 Carton)|
|Frozen chopped spinach||10 Ounce, thawed (1 Package)|
|Canned water chestnuts||8 Ounce, drained, chopped (1 Can)|
|Low fat sour cream||1⁄2 Cup (8 tbs)|
|Dry vegetable soup mix||1⁄4 Cup (4 tbs)|
|Grated onion||2 Teaspoon|
|Lemon juice||1 Teaspoon|
Position knife blade in food processor bowl; add cottage cheese.
Process until smooth, scraping sides of processor bowl once.
Transfer cottage cheese to a bowl, and set aside.
Drain spinach; press between paper towels until barely moist.
Add spinach, water chestnuts, and remaining ingredients to cottage cheese; stir well.
Cover and chill at least 3 hours.
Serve with Melba rounds or fresh vegetables.
