Yogurt Cheese And Dips
|Plain yogurt/1 quart nonfat yogurt||1 Quart (low-fat, without agar or gelatin)|
Line sieve with towel.
Place sieve or yogurt funnel over bowl, allowing at least a 1-inch space at bottom of bowl for liquid to drain and collect.
Spoon yogurt into sieve or funnel.
If using sieve, twist towel closed and fasten with clip or clothespin.
If using yogurt funnel, cover loosely with plastic wrap.
Place in refrigerator and allow liquid to drain until Yogurt Cheese is of desired consistency (8 to 14 hours or more).
The longer the Yogurt Cheese drains, the firmer it will get.
