Cream Cheese Roasted Garlic Dip
|Garlic head||1 , roasted|
|Roasted red pepper||1⁄4 Cup (4 tbs), roughly chopped (Canned / Fresh)|
|Plain yogurt/Mayonnaise||1 Cup (16 tbs)|
|Cream cheese||1 Tablespoon (At Room Temperature)|
|Finely chopped parsley||2 Tablespoon|
|Black pepper||1⁄4 Teaspoon|
1. While the garlic and red pepper are roasting, put the yogurt into a fine mesh strainer suspended over a bowl. Discard the liquid from under the yogurt; then put the yogurt into a bowl.
2. Add the cream cheese, parsley, salt, pepper, and Tabasco to the yogurt and mix well.
3. When the garlic is done and cooled, cut the head in half laterally. Gently push the roasted garlic through the strainer with your hands. Discard the skins. Whisk together the garlic and yogurt mixture until it is smooth.
4. Season to taste. Garnish with roasted red pepper, if desired. Serve with vegetable sticks and/or bread.
