Ranch Style Bean Dip
|Butter/Margarine||1⁄4 Cup (4 tbs)|
|Onion||1 Small, chopped|
|Jalapeno pepper||1 , seeded, finely chopped|
|Garlic||1 Clove (5 gm), crushed|
|Canned pinto beans/Canned kidney beans||16 Ounce, drained (1 Can)|
|Grated monterey jack cheese||4 Ounce (1 Cup)|
|Corn chips||1 Cup (16 tbs) (For Dipping)|
In a medium skillet, melt butter or margarine.
Add onion, jalapeno pepper and garlic; saute until tender.
In a medium bowl, use a fork to mash beans.
Stir into onion mixture.
Cook and stir over low heat until hot but not boiling.
Stir in cheese until melted; do not boil.
Spoon into a small fondue pot or small bowl on a hot tray.
