Luscious Lemon Fruit Dip

Ingredients
  Sugar 2 Cup (32 tbs)
  Cornstarch 2⁄3 Cup (10.67 tbs)
  Cold water 1 Cup (16 tbs)
  Eggs 4 , beaten
  Lemon juice 2⁄3 Cup (10.67 tbs)
  Vanilla extract 2 Teaspoon
  Heavy whipping cream 2 Cup (32 tbs), whipped
  Assorted fresh fruit 2 Cup (32 tbs) (adjust quantity as needed)
Directions

In a large heavy saucepan, combine the sugar and cornstarch.
Gradually whisk in the water until smooth.
Cook and stir over medium-high heat until thickened and bubbly.
Reduce the heat; cook and stir 2 minutes longer.
Remove from the heat.
Stir a small amount of hot mixture into eggs; return all to the pan, stirring constantly.
Bring to a gentle boil; cook and stir for 2 minutes longer.
Remove from the heat.
Gently stir in lemon juice and vanilla.
Transfer to a bowl.
Cool to room temperature without stirring.
Cover the surface of mixture with waxed paper; refrigerate until cooled.
Fold in whipped cream
