Middle Eastern Fruity Dip

Ingredients
  Shallots 2 Small, finely chopped
  Garlic 2 Clove (10 gm), crushed
  Olive oil 2 Tablespoon
  Curry powder 2 Teaspoon
  Seasoned pepper 2 Tablespoon
  Tomato paste 2 Tablespoon, diluted in equal amount of water
  Water 2 Tablespoon
  Lemon juice 2 Tablespoon
  Apricot jam 1 Tablespoon
  Basic mayonnaise 1⁄2 Cup (8 tbs)
Directions

Cook shallots and garlic in oil.
When soft, add curry powder, pepper, tomato paste, lemon juice and jam.
Simmer for 4 to 5 minutes.
Place in a blender and process until smooth or press through a sieve.
Let cool.
Add the mayonnaise.
Mix well.
Chill.
