Warm Leek And Goat Cheese Dip

  Unsalted butter 4 Tablespoon
  Leeks 8 Small, cut into 1/3 inch rings (White And Tender Green Parts Only)
  Fresh goat cheese 1 Pound (At Room Temperature)
  Cream cheese 1⁄2 Pound (At Room Temperature)
  Freshly ground pepper To Taste
  Snipped chives 2 Tablespoon
  Flat bread/Pita crisps, crackers, crusty bread / raw vegetables 1 Dozen (Adjust Quantity As Needed For Serving)
  Salt To Taste

Melt the butter in a large, deep skillet.
Add the leeks and stir to coat.
Cover and cook over high heat until just beginning to soften, about 3 minutes.
Uncover and cook over moderate heat, stirring frequently, until tender and lightly browned in spots, about 8 minutes.
Remove from the heat.
Stir in the goat cheese and cream cheese until completely melted and season with salt and pepper.
Transfer to a warmed serving dish, sprinkle with the snipped chives and serve immediately, with flatbreads.
