Warm Leek And Goat Cheese Dip
|Unsalted butter||4 Tablespoon|
|Leeks||8 Small, cut into 1/3 inch rings (White And Tender Green Parts Only)|
|Fresh goat cheese||1 Pound (At Room Temperature)|
|Cream cheese||1⁄2 Pound (At Room Temperature)|
|Freshly ground pepper||To Taste|
|Snipped chives||2 Tablespoon|
|Flat bread/Pita crisps, crackers, crusty bread / raw vegetables||1 Dozen (Adjust Quantity As Needed For Serving)|
Melt the butter in a large, deep skillet.
Add the leeks and stir to coat.
Cover and cook over high heat until just beginning to soften, about 3 minutes.
Uncover and cook over moderate heat, stirring frequently, until tender and lightly browned in spots, about 8 minutes.
Remove from the heat.
Stir in the goat cheese and cream cheese until completely melted and season with salt and pepper.
Transfer to a warmed serving dish, sprinkle with the snipped chives and serve immediately, with flatbreads.
