Spicy Garbanzo Dip
|Garbanzo beans||1 Can (10 oz), rinsed (canned,drained)|
|Lemon juice||1 Tablespoon|
|Fresh garlic||1 Teaspoon, crushed|
|Cumin||1⁄2 Teaspoon, ground|
|Cayenne pepper||1⁄4 Teaspoon|
|Scallions||1⁄4 Cup (4 tbs), finely chopped|
|Red bell pepper||1⁄4 Cup (4 tbs), finely chopped|
|Green bell pepper||1⁄4 Cup (4 tbs), finely chopped|
|Black olives||1⁄4 Cup (4 tbs), sliced (for garnish)|
1. Combine the beans, lemon juice, garlic, cumin, and pepper in a food processor or blender, and process to the desired degree of smoothness. Add the scallions and peppers, and process just enough to mix.
2. Transfer the dip to a serving dish, and garnish with the olives.
