Minted Spinach Dip

Ingredients
  1% fat cottage cheese 1 Cup (16 tbs)
  Chopped spinach/2 1/2 ounces frozen chopped spinach, thawed and squeezed dry 4 Ounce, blanched and drained (1/2 Cup)
  Low fat plain yogurt/Reduced fat sour cream 1⁄4 Cup (4 tbs)
  Minced meat/1/4 cup minced parsley mixed with 1 teaspoon dried mint 1⁄4 Cup (4 tbs)
  Green onion 1 , chopped (White Part Only)
  Garlic 1 Clove (5 gm), minced
  Grated lemon rind 1⁄4 Teaspoon
  Salt 1⁄4 Teaspoon
  Red cayenne pepper/Cayenne 1⁄8 Teaspoon
Directions

1 In a food processor or blender, whirl all the ingredients for 30 to 45 seconds or until smooth.
Transfer the dip to a small bowl, cover, and chill until ready to serve
