Finnan Haddie With Dill

Ingredients
  Finnan haddie 1 Pound (Fresh)
  Milk 2 1⁄4 Cup (36 tbs) (Or More If Needed)
  Butter 4 Tablespoon (1/2 Stick)
  Flour 4 Tablespoon
  Chopped fresh dill/One tablespoon dried dill 2 Tablespoon
  Dill sprigs/Parsley sprigs 1
Directions

Place the finnan haddie in a saucepan and cover with milk.
Bring to a boil and simmer, covered, twenty to twenty five minutes.
Drain and reserve two cups of the milk.
Tear the fish into bite-size pieces and reserve.
Heat the butter and blend in the flour, stirring with a wire whisk.
When the mixture is well blended, add the reserved milk, stirring vigorously with the whisk.
When the sauce is thickened and smooth, add the finnan haddie.
