Finnan Haddie With Dill
|Finnan haddie||1 Pound (Fresh)|
|Milk||2 1⁄4 Cup (36 tbs) (Or More If Needed)|
|Butter||4 Tablespoon (1/2 Stick)|
|Chopped fresh dill/One tablespoon dried dill||2 Tablespoon|
|Dill sprigs/Parsley sprigs||1|
Place the finnan haddie in a saucepan and cover with milk.
Bring to a boil and simmer, covered, twenty to twenty five minutes.
Drain and reserve two cups of the milk.
Tear the fish into bite-size pieces and reserve.
Heat the butter and blend in the flour, stirring with a wire whisk.
When the mixture is well blended, add the reserved milk, stirring vigorously with the whisk.
When the sauce is thickened and smooth, add the finnan haddie.
