Simple Dilled Shrimp

Ingredients
  Medium shrimp 12 Ounce, peeled and deveined
  Lemon slices 2
  Bay leaf 1
  Water 3⁄4 Cup (12 tbs)
  Tarragon vinegar 1⁄4 Cup (4 tbs)
  Minced dill/2 tablespoons dill weed 1⁄4 Cup (4 tbs) (Use Fresh)
  Stalk celery 1 Small, chopped
  Green onions 2 , chopped
  Head of lettuce 1 (Boston / Bibb)
Directions

Place the shrimp, lemon slices and bay leaf in a medium saucepan and add just enough water to cover the shrimp.
Bring to a boil, then reduce the heat.
Simmer, uncovered, about 2 minutes or until the shrimp turn pink.
Drain the shrimp and discard the liquid, lemon slices and bay leaf.
Transfer the shrimp to a medium glass bowl.
Add the 3/4 cup water, the vinegar, dill, celery and onions.
Stir until mixed.
Cover and marinate in the refrigerator for 8 to 12 hours, stirring occasionally.
Drain the marinated shrimp and discard the marinade.
