Date Pumpkin Cookies
|Whole wheat pastry flour||1 1⁄2 Cup (24 tbs)|
|Baking powder||2 Teaspoon|
|Baking soda||1⁄2 Teaspoon|
|Ground cloves||1⁄8 Teaspoon|
|Butter/Margarine||2⁄3 Cup (10.67 tbs), softened|
|Sugar||1⁄2 Cup (8 tbs)|
|Packed brown sugar||1⁄2 Cup (8 tbs)|
|Eggs||2 , beaten|
|Pumpkin||1 1⁄4 Cup (20 tbs) (Cooked Or Canned)|
|Chopped dates||1 Cup (16 tbs)|
|Rolled oats||1 Cup (16 tbs)|
|Chopped nuts||1⁄2 Cup (8 tbs)|
Stir together flour, baking powder, soda, salt, cinnamon, nutmeg, and cloves until well blended.
Cream butter and sugars.
Add eggs; beat well.
Stir in pumpkin and vanilla.
Blend in flour mixture; stir thoroughly.
Add dates, oats, and nuts; mix well.
Drop by teaspoonfuls onto greased baking sheet.
Bake at 375 Â°F about 12 minutes.
Remove to rack to cool.
