Date Orange Filled Cookies
|Dates||1 1⁄2 Cup (24 tbs), chopped|
|Sugar||1⁄2 Cup (8 tbs)|
|Orange juice||1⁄2 Cup (8 tbs)|
|Orange rind||1 Tablespoon, grated|
|Shortening||1 Cup (16 tbs)|
|Brown sugar||1 1⁄2 Cup (24 tbs)|
|All purpose flour||3 Cup (48 tbs)|
|Baking powder||2 Teaspoon|
|Water||1⁄4 Cup (4 tbs)|
|Corn flakes||2 Cup (32 tbs), crushed|
Combine first four ingredients.
Cook over low heat until a soft paste is formed.
Mean while, cream shortening and brown sugar well.
Sift flour, baking powder and salt together, and add alternately with water and vanilla to shortening mixture.
Stir in corn flakes.
Roll dough 1/8 inch thick.
Cut with floured 2 1/2 to 3-inch cutter.
Put a teaspoon of filling on one round and place a second round on top, pressing edges together with fork.
Bake on greased cooky sheet at 375F for about 20 minutes.
