Midget Date Loaves
|Boiling water||1 Cup (16 tbs)|
|Dates||8 Ounce, cut up (pitted)|
|Shortening||1⁄4 Cup (4 tbs)|
|All purpose flour||1 3⁄4 Cup (28 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Baking soda||1 Teaspoon|
|Egg||1 , beaten|
|Walnuts||3⁄4 Cup (12 tbs), chopped|
Pour boiling water over dates; add shortening and let stand 5 minutes.
Stir to combine the flour, sugar, soda, and 1/4, teaspoon salt; stir in date mixture, egg, and walnuts.
Spread batter evenly in three greased 6x3x2-inch loaf pans or one 9x5x3-inch loaf pan.
Bake at 350° about 35 minutes for small loaves or 55 to 60 minutes for large loaf.
Remove from pans.
