|Unflavored gelatin||1⁄2 Tablespoon (1/2 Envelope)|
|Skim milk||1 1⁄2 Cup (24 tbs)|
|Creamy peanut butter||1 Tablespoon|
|Pitted dates||1⁄3 Cup (5.33 tbs), snipped|
In saucepan sprinkle gelatin over milk; stir over medium heat till gelatin is dissolved.
Slowly stir half of hot mixture into beaten yolks; return all to saucepan.
Cook and stir over medium heat for 1 to 2 minutes or till slightly thickened.
Remove from heat.
Blend in sugar and peanut butter.
Stir in the 1/8 cup dates and vanilla.
Chill till partially set.
Beat egg whites to stiff peaks; fold into gelatin mixture.
Spoon mixture into 6 individual dessert glasses.
Chill till firm.
Garnish each serving with snipped dates, if desired.
