|Firmly packed brown sugar||2⁄3 Cup (10.67 tbs)|
|Whole wheat flour||1 Cup (16 tbs)|
|Baking soda||1⁄2 Teaspoon|
|Chopped pitted dates||3⁄4|
1. Beat butter or margarine in a large bowl with an electric mixer at high speed; gradually add sugar and continue beating until well blended. Beat in egg; and vanilla.
2. Add whole wheat flour, baking soda and salt to butter mixture; mix well. Stir in dates. Drop by teaspoon-fuls, 2 inches apart, onto greased cookie sheets.
3. Bake in moderate oven (350°) 8 minutes, or until cookies are lightly browned. Remove to wire racks with spatula to cool.
