Molded Date Delight

Ingredients
  Unflavored gelatin 1 Tablespoon (1 Envelope)
  Cold water 1⁄4 Cup (4 tbs)
  Honey 3 Tablespoon
  Basic carob syrup 1 Tablespoon
  Salt 1⁄4 Teaspoon
  Hot coffee 1 Cup (16 tbs)
  Lemon juice 1 Tablespoon
  Sliced dates 1 Cup (16 tbs)
  Chopped walnuts 1⁄4 Cup (4 tbs)
  Cream 1⁄2 Cup (8 tbs), whipped
  Vanilla 1⁄2 Teaspoon
Directions

Soak gelatin in cold water.
Add honey, carob, salt, hot coffee, and lemon juice.
Stir until gelatin is dissolved.
Chill.
When gelatin begins to thicken, add dates and nuts.
Fold in the vanilla and half of the whipped cream.
Chill.
When ready to serve, unmold onto fancy plate and garnish with remaining whipped cream.
