Raisin Rice Custard
|Skim milk||1 Cup (16 tbs)|
|Reduced calorie custard mix||8 Ounce|
|Cooke long grain rice||1⁄2 Cup (8 tbs)|
|Raisins||1⁄4 Cup (4 tbs)|
|Vanilla extract||1⁄2 Teaspoon|
|Ground cinnamon/Ground nutmeg||To Taste|
In small saucepan heat milk to a simmer; stirring constantly, add custard mix and cook until dissolved, at least 1 minute.
Allow to cool for 3 to 5 minutes.
In bowl combine rice, raisins, and vanilla; stir into cooled custard.
Into each of two 6-ounce custard cups or dessert dishes spoon half of mixture; garnish each portion with dash cinnamon or nutmeg.
Cover and refrigerate until set.
