Microwave Vanilla Custard
|Skim milk||2 Cup (32 tbs)|
|Vanilla extract||1⁄2 Teaspoon|
Combine milk and 3 Tablespoons sugar in a 2-quart glass measure.
Microwave at HIGH for 5 to 6 minutes or just until mixture begins to boil, stirring at 1 minute intervals.
Combine egg and 1 Tablespoon sugar in a small bowl; bear well, using a wire whisk Gradually add cornstarch, bearing constantly.
Gradually stir one-fourth of hot milk mixture into egg mixture, add to remaining milk mixture, stirring constantly.
Microwave at HIGH for 2 to 3 minutes or until thickened, stirring every 30 seconds.
Remove from microwave, and stir 3 minutes.
Stir in vanilla.
Spoon mixture into 4 dessert dishes, chill until set.
