Spinach And Cheese Flan

Ingredients
For pastry
  Margarine 40 Gram
  Plain flour 175 Gram
  Lard 40 Gram
  Water 1 Cup (16 tbs)
  Chopped spinach 226 Gram (Packet)
  Egg 1
For filling
  Single cream 150 Milliliter
  Ground black pepper To Taste
  Grated cheddar cheese 75 Gram
  Salt To Taste
  Freshly ground black pepper To Taste
Directions

GETTING READY
1.Take a bowl, sift flour in it.

MAKING
2.Put the margarine and lard in the flour bowl and mix well.
3.Once a coarse mixture is formed, add cold water and knead into dough.
4.Take a baking sheet, turn out the dough on it on a 20cm flour ring and refrigerate for 10 minutes.
5.Put greaseproof paper and baking beans in the set flan and bake for 15 minutes in hot oven.
6.Once done, remove the beans and paper.
7.Prepare spinach following the packet instructions.
8.Once done, strain and put a layer of it on the flan.
9.Mix egg, cream and seasonings and drizzle on the flan case.
10.Add sprinkled cheese on the top.
11.Lower the oven temperature and bake flan for 30 minutes till the time flan is set.

SERVING
12.Serve warm.

Tip
The flan can be frozen for later use.
Defrost overnight in the refrigerator and reheat in moderate oven at 180 C for 25 minutes.
