Baked Custard's picture
  Milk 3 Cup (48 tbs)
  Eggs 3
  Sugar 1⁄2 Cup (8 tbs)
  Salt 1⁄4 Teaspoon
  Vanilla 1⁄2 Teaspoon

1. Start oven, set at Moderate, 350° F. Rub a 1 1/2-quart baking dish, or 6 custard cups with margarine. Fill a pan half full of hot water.
2. Scald the milk.
3. Beat the eggs slightly, add the sugar and salt, then pour the hot milk into this mixture. Add the vanilla.
4. Pour into the baking dish or custard cups. Place in the pan of hot water. Bake 20 to 25 minutes if baked in cups; 30 to 35 minutes if in a large dish. To test, insert a silver knife in the custard. If it comes out without coating, the custard is done. Look at the custard as it bakes to make sure that the water around it does not boil. Turn oven down if the water begins to simmer; the custard will come out watery if the water boils.
