Pumpkin Creme Brulee

Ingredients
  Pumpkin 6 Ounce, cooked and mashed (185 Grams)
  Caster sugar 3 Tablespoon
  Egg yolks 4
  Vanilla essence 1 Teaspoon
  Ground mixed spice 1⁄2 Teaspoon
  Double cream 9 1⁄2 Fluid Ounce (300 Milliliter)
  Brown sugar 3 Tablespoon
Directions

1. Combine pumpkin, sugar, egg yolks, vanilla and mixed spice in a mixing bowl. Heat cream in a saucepan until almost boiling, pour into pumpkin mixture in a steady stream, stirring continuously.
2. Pour pumpkin mixture into four 250 ml (8 fl oz) capacity ramekins. Place in a baking pan and pour in enough hot water to come halfway up sides of ramekins. Cook for 25 minutes or until brulees are firm. Cool to room temperature.
3 Sift brown sugar over top of brulees and place under a preheated grill for 1 minute or until sugar melts.
