Baked Apple and Cheese Flan
|For cheese pastry|
|Cayenne pepper||1 Pinch|
|Baking powder||1 Pinch|
|Butter||1 1⁄2 Ounce|
|Cheddar cheese||2 Ounce, finely grated, use cold water to bind|
|Cooking apples||8 Ounce|
|Cheddar cheese||2 Ounce, diced|
|Granulated sugar||1⁄2 Ounce|
|Egg white/Milk||1 Teaspoon (Leveled)|
|Cheddar cheese||1⁄2 Teaspoon, finely grated (To Glaze)|
Sieve flour, salt, cayenne pepper and baking powder.
Rub in butter.
Add grated cheese and sufficient cold water to bind.
Leave to stand in a cool place.
Peel, core, quarter and slice apples, and mix with diced cheese, sugar and nutmeg.
Roll out pastry to an 8-inch square.
Cut six 1/2-inch strips off one side, and keep for latticing; use rest of pastry as base of flan.
Lift on to baking tray.
Spread filling over centre of this strip and fold over 3/4-inch of pastry on each side.
Place diagonal strips of pastry 1/2-inch apart down the length of the flan.
Glaze top of flan with egg white or milk, and sprinkle with very finely grated cheese.
Bake in centre of a moderately hot oven (400°F - Gas Mark 5) for 25-30 minutes.
Serve hot or cold.
