Baked Apple and Cheese Flan

For cheese pastry
  Flour 4 Ounce
  Salt 1 Pinch
  Cayenne pepper 1 Pinch
  Baking powder 1 Pinch
  Butter 1 1⁄2 Ounce
  Cheddar cheese 2 Ounce, finely grated, use cold water to bind
For filling
  Cooking apples 8 Ounce
  Cheddar cheese 2 Ounce, diced
  Granulated sugar 1⁄2 Ounce
  Nutmeg 1⁄2 Teaspoon
  Egg white/Milk 1 Teaspoon (Leveled)
  Cheddar cheese 1⁄2 Teaspoon, finely grated (To Glaze)

Sieve flour, salt, cayenne pepper and baking powder.
Rub in butter.
Add grated cheese and sufficient cold water to bind.
Leave to stand in a cool place.
Peel, core, quarter and slice apples, and mix with diced cheese, sugar and nutmeg.
Roll out pastry to an 8-inch square.
Cut six 1/2-inch strips off one side, and keep for latticing; use rest of pastry as base of flan.
Lift on to baking tray.
Spread filling over centre of this strip and fold over 3/4-inch of pastry on each side.
Place diagonal strips of pastry 1/2-inch apart down the length of the flan.
Glaze top of flan with egg white or milk, and sprinkle with very finely grated cheese.
Bake in centre of a moderately hot oven (400°F - Gas Mark 5) for 25-30 minutes.
Serve hot or cold.
