This delicious pumpkin flan is the result of an experiment in replacing the recipe's usual cream and half and half with low-fat milk. While part of me may have been secretly hoping it wouldn’t come out that good (so I could go back to using cream), I was really happy with the results.
This Pumpkin Flan is so delicious, it is hard to believe that it is low-fat. Chef John makes this great variation of the classic caramel custard, using canned pumpkin. Though the recipe would be great any time of year, it is ideal for the holiday season. It is definitely a great alternative for those who want to forgo the usual array of pumpkin pies and want something a little lighter and crust-free. Don’t tell anyone its low-fat until they have eaten it!
