Shrimp Custard Tarts
|Pastry||1 (Based On 3 Cups Flour)|
|Cleaned cooked shrimp||1 Pound|
|Grated parmesan cheese||1⁄4 Cup (4 tbs)|
|Milk||2 Cup (32 tbs)|
|Minced fresh thyme/Chervil/use 1/2 teaspoon of the dried herbs||2 1⁄2 Teaspoon|
Line 8 individual foil pie or tart pans with pastry.
Arrange shrimp on bottom of each pan.
Cook bacon until crisp; crumble and sprinkle over the shrimp.
Sprinkle a layer of cheese over the bacon.
Beat eggs slightly; add milk, thyme, Tabasco, salt, and pepper.
Pour into pastry-lined pans.
Bake in a very hot oven (450°) for 10 minutes; reduce heat to 350°, and bake 20 minutes, or until filling is set.
