Shrimp Custard Tarts

Ingredients
  Pastry 1 (Based On 3 Cups Flour)
  Cleaned cooked shrimp 1 Pound
  Bacon slices 4
  Grated parmesan cheese 1⁄4 Cup (4 tbs)
  Eggs 4
  Milk 2 Cup (32 tbs)
  Minced fresh thyme/Chervil/use 1/2 teaspoon of the dried herbs 2 1⁄2 Teaspoon
  Tabasco 3⁄4 Teaspoon
  Salt To Taste
  Pepper To Taste
Directions

Line 8 individual foil pie or tart pans with pastry.
Arrange shrimp on bottom of each pan.
Cook bacon until crisp; crumble and sprinkle over the shrimp.
Sprinkle a layer of cheese over the bacon.
Beat eggs slightly; add milk, thyme, Tabasco, salt, and pepper.
Pour into pastry-lined pans.
Bake in a very hot oven (450°) for 10 minutes; reduce heat to 350°, and bake 20 minutes, or until filling is set.
