True Chocolate Custard
|Skim milk||2 Cup (32 tbs)|
|Vegetable oil||1 Teaspoon|
|Vanilla extract||1 Teaspoon|
|Semisweet chocolate||2 Ounce, chopped|
|Granulated fructose||2 Teaspoon|
Combine skim milk, vegetable oil, and vanilla in a saucepan.
Bring to a simmer.
Remove from heat; stir in chocolate until melted and mixture is smooth.
Whisk egg yolks and fructose in a medium bowl.
Very slowly whisk egg yolk mixture into hot chocolate.
Cool to room temperature, stirring occasionally.
Position a rack in the middle of the oven.
Preheat oven to 300°F (150°C).
Place six custard cups in a shallow baking pan.
Evenly divide the chocolate mixture between the cups.
Fill baking pan with enough hot water to come halfway up the sides of the custard cups.
Bake until custards are just set, about 35 to 40 minutes.
