Creamy Custard Filling
|Sugar||1⁄4 Cup (4 tbs)|
|Milk||1 Cup (16 tbs)|
|Vanilla extract||1 Teaspoon|
1. In 2-quart saucepan, mix sugar, cornstarch, and salt; stir in milk until smooth. Over medium heat, cook until mixture thickens and boils, stirring constantly; boil 1 minute.
2. In small bowl, beat eggs slightly. Into eggs, beat small amount of hot milk mixture. Reduce heat to low; slowly pour egg mixture back into milk mixture, stirring rapidly to prevent lumping. Cook, stirring constantly, until custard thickens and coats the back of a spoon well (do not boil or mixture will curdle).
3. Remove saucepan from heat; stir in vanilla extract. Pour custard into a bowl; cover surface with plastic wrap and refrigerate until well chilled.
