|Boiling water||1 1⁄2 Cup (24 tbs)|
|Grated lemon rind||2 Tablespoon|
|Lemon juice||1⁄4 Cup (4 tbs)|
Combine sugar, cornstarch, and salt in a heavy saucepan; stir well.
Add water, and cook over low heat, stirring constantly, until thickened.
Combine egg yolks, lemon rind, and juice; beat well.
Gradually stir about one fourth of hot mixture into yolks; add to remaining hot mixture, stirring constantly.
Cook, stirring constantly, 10 minutes or until smooth and thickened.
