Venison curry is a dry and spicy dish prepared with traditional Indian spices and deer meat. While the curry was considered to be a delicacy during the days of the British Raj in India, it is unlikely to be served in eateries across India now as hunting deer for consumption of meat is considered to be illegal.
The curry is, however, extremely popular in Europe where venison is available in abundance. The BBC cookbook recommends cooking it with apple and onions while the sweet potatoes and chili combination is more acceptable in America. The South African antelope is also cooked in the traditional Indian style and is a popular dish in Durban, the area with a sizable Indian population. Thai curries, made with red or yellow curry pastes and coconut milk are also popular.
The dish is customarily served with pilaf rice or mashed potatoes and may also be cooked with pumpkins. The Europeans prefer to consume the curry with the venison cooked to a medium rare state.
Overview of Venison Curry Recipes
The most acceptable and simplest form of making curried venison is to add sautéed apples, onions, and celery to beef broth which has been cooked with Tabasco and Worcestershire sauce. Curry powder and turmeric also go into the broth which is thickened by adding a teaspoon full of flour. Medium rare elk’s meat or venison is added when the broth begins to bubble and the entire dish is allowed to simmer for a couple of minutes before removing it from fire and adding egg yolk along with some evaporated milk just before serving.
