Shrimp Curry Recipes Overview
The easiest method adopted by the Western world to prepare the curried shrimp involves sautéing the curry paste or powder in hot oil before adding the cleaned, deveined shrimps to it and coating them well with the fried spices. A measure of vegetable stock is usually added thereafter and the entire dish is simmered on low heat after adding a stick of cinnamon to it. The curry, thus prepared, is served with a garnish of cilantro and may even be topped with a dollop of sour cream.
The Goan version involves marinating the shrimps in black pepper and tamarind paste for a while before adding them to the bubbling pot of fried spices and coconut milk tempered with green chilies. The Bengal version is more sweet than hot as it uses a substantial amount of sugar along with coconut milk.
