Pineapple curry is a sweet and sour, spicy preparation popular in parts of India and the Far East. The fruit based curry is prepared in the south of India with the Udipi cuisine of Karnataka being particularly famous for it. The simplest method of cooking the curry involves boiling the sliced pineapple along with water and turmeric powder. A paste of ground coconut, cumin, and green chilies are added to the simmering dish with some fresh yogurt being stirred into it. A tempering of mustard seeds, whole red chilies and curry leaves are poured into the pan and the dish removed from heat after seasoning it with salt and sugar.
