Curried Tomatoes And Onion
|Minced fresh ginger||1 Teaspoon|
|Garlic clove||1 Small|
|Curry powder||1⁄2 Teaspoon|
|Corn oil||1 1⁄2 Teaspoon|
|Freshly ground black pepper||To Taste|
Chop onion, mince garlic and saute in hot oil for about 3 minutes, until onion begins to soften.
Coarsely chop tomatoes, mince ginger; add with remaining ingredients and cook over medium high heat until tomatoes are soft and have released their juices, 5 to 7 minutes longer.
