Fish In Curry Sauce
|Chopped onion||1⁄4 Pound|
|Garlic||2 Clove (10 gm), chopped|
|Concentrated tomato juice||3⁄4 Cup (12 tbs)|
|Curry powder||1 Tablespoon|
|Coconut milk||1⁄4 Cup (4 tbs)|
|Firm white fish||1 3⁄4 Pound|
|Banana||1 Small (not too ripe)|
Puree the onions and garlic coarsely, in a food processor.
Put the puree in a small casserole.
Pour the oil over.
Cover and microwave on HIGH for 3 minutes.
In a bowl, mix together the tomato juice, curry powder, brandy and coconut milk.
Pour over the onion mixture and stir thoroughly.
Taste and adjust seasoning.
Cover and microwave on HIGH for 5 minutes.
Rinse the fish under plenty of cold running water.
Pat dry on kitchen paper.
Cut the fish into 8 equal pieces and season with salt and pepper.
Add the fish pieces to the casserole and stir carefully.
Cover and microwave on HIGH for 4 minutes.
Peel the banana and slice into rounds.
Add to the fish mixture and cook for 1 further minute.
