Stuffed Eggs Curry
|Hard cooked eggs||12|
|Mayonnaise||1 Cup (16 tbs)|
|Chicken seasoned stock base||1 Teaspoon|
|Instant onion powder||1⁄4 Teaspoon|
|White pepper||1⁄4 Teaspoon|
|Curry powder||1 Teaspoon|
|Finely minced cooked chicken||1 Cup (16 tbs)|
Cut eggs into halves, crosswise; slice a small cap off ends.
Remove yolks; mash or force through sieve.
Add mayonnaise, stock base, onion powder, pepper, curry powder, salt and chicken; mix thoroughly.
Refill egg whites, piling yolk mixture high.
Cap with smaller portion of white; top each with rolled an chovies, sliced ripe or stuffed olives and capers.
