Baby Corn Curry
|Baby corn||2 Cup (32 tbs)|
|Tomato||1 , chopped|
|Onion||1⁄2 , chopped|
|Green chilies||3 , slit lengthwise|
|Cinnamon sticks||2 Medium|
|Turmeric powder||2 Pinch|
|Coriander powder||1⁄4 Teaspoon|
|Chili powder||To Taste|
|Coriander/Cilantro||1⁄4 Cup (4 tbs) (For Garnish)|
Cut Baby Corn into 1 inch long pieces. Wask and Keep aside.
Heat a skillet. Add 3 tbs oil. Add chopped onions and saute well until they begin to change color.
Add cloves, cinnamon sticks, green chillies and a pinch of turmeric powder.
Add chopped tomatoes.Cover and cook on medium until tomatoes turn tender and can be mashed (approx 3 mins)
Remove lid. Add Baby corn. Adjust salt and chilly powder. Add coriander powder. Mix well. Cover and continue cooking for another 3-4 minutes.
Remove lid and cook for an additional minute.
Garnish with Cilantro
You may squeeze juice of lime before serving.
Serve Hot with Roti/Chapathi.
