Arbi Curry

Ingredients
  Arbi 1 Kilogram
  Red chili powder 1 1⁄2 Teaspoon
  Curd 1 Cup (16 tbs)
  Ghee 250 Gram
  Salt To Taste
  Black pepper 1 Teaspoon
  Lemon 1
  Ground ginger 2 Teaspoon (Fresh)
  Water 1 Cup (16 tbs)
  Cumin powder 1 Teaspoon (White Variety)
Directions

GETTING READY
1 Peel and wash the arbi.
2 Using a fork, prick all over.
3 Sprinkle with lemon juice and 1 tsp salt.
4 Keep it aside for one hour.

MAKING
5 In a pan, heat the ghee.
6 Add in the prepared arbi and fry until golden brown.
7 In a bowl, mix turmeric, ground ginger, ground spices, red chilli powder, black pepper, ground white cumin seeds and salt
8 Combine with the arbi, stirring for a few minutes.
9 In a bowl, beat the curd with water.
10 Pour onto the fried arbi and cook until the gravy is thick.
11 Remove from the heat and sprinkle with chopped coriander leaves.

SERVING
12 Serve hot.
