Easy Poached Eggs With Curry Sauce
|Onion||1⁄2 Small, minced|
|Curry powder||1 Teaspoon|
|Stock||1 Cup (16 tbs) (or water)|
Melt the fat, add the minced onion and saute until brown.
Add the flour and curry powder and mix thoroughly.
Add the stock or water.
Cook until the mixture thickens and is smooth.
Add salt and pepper.
Meanwhile poach 6 eggs and place on rounds of buttered toast.
Add to the curry sauce, the egg yolk and cream beaten together, and pour the sauce over the eggs.
Serve at once.
