Thai Jumbo Scallops With Massaman Curry Sauce
|Jumbo sea scallops||1⁄2 Pound|
|Onions||1⁄4 Cup (4 tbs), diced|
1 Heat a pan to medium-high heat.
2 Add in the scallops and stir fry for about 3-5 minutes
3 While the scallops are cooking, slice 1/2 of an avocado into thin slices and place on a plate.
4 Once the scallops are cooked, transfer them on the plate with avocado.
5 In the same pan, stir-fry the onions.
6 Cook the onions for about 1 minute and then add the massaman curry sauce.
7 Cook the massaman curry sauce and onions together for about two minutes.
8 At this point the sauce should be at serving temperature.
9 Pour the sauce with onions over the scallops.
10 Serve at once with Thai Jasmine Rice (optional)
