Vegetable Curry

Ingredients
  Carrot 2 Large, chopped
  Sweet potato 1 Large, chopped
  Onion 2 Large, chopped
  Water 2 Pint
  Chopped tomato 2 Can (20 oz)
  Vegetable stock cubes 3 Medium
  Coriander powder 2 Teaspoon
  Cumin powder 2 Teaspoon
  Chili powder 1 Teaspoon
  Garlic powder 2 Teaspoon
  Grated fresh ginger 2 Teaspoon
  Head of broccoli 1 Large, chopped
  Head of cauliflower 1 Large, chopped
  Salt 1 Teaspoon
Directions

GETTING READY
1.Chop the vegetables.

MAKING
2.In a large stock pot, drop the carrots and the sweet potato.
3.Add the onions.
4.Pour in the water.
5.Empty the cans of crushed tomatoes.
6.Add the vegetable stock cubes, coriander powder, cumin powder, chili powder, garlic powder and the freshly grated ginger.
7.Turn the heat on and once it starts boiling, reduce the heat to a simmer and cook it for 30 minutes.
8.Add the broccoli and the cauliflower and stir for another 30 minutes.
9.Season with salt.
10.Turn off the heat.

SERVING
11.Serve with a little basmati rice on the side.
