1.Chop the mushrooms.
2.Dice the eggplant, tofu and the red bell pepper.
3.Heat a sauce pan and add the vegan butter.
4.Once melted, add the snow peas and the red bell pepper.
5.Saute for about 5 minutes until a sizzle can be heard.
6.Add the apple seasoning and the coriander powder.
7.Drizzle in the Maggi seasoning.
8.Set aside the stir fried snow peas and red bell peppers.
9.This is to be served as a side along with the curry.
