Rice and Turkey Skillet Curry
|Water||2 Cup (32 tbs)|
|Converted rice||1 Cup (16 tbs) (UNCLE BEN'S Brand)|
|Pineapple juice||6 Ounce (3/4 cup)|
|Diced dried apricots||1⁄3 Cup (5.33 tbs)|
|Dried cranberries||1⁄4 Cup (4 tbs)|
|Curry powder||1 Teaspoon|
|Cooked turkey||8 Ounce (1 1/2 cups)|
1 In a large skillet, bring water, rice, pineapple juice, apricots, cranberries and curry powder to a boil.
2 Cover and lower the heat.
3 Simmer for 15 minutes or until rice is tender and the liquid is absorbed.
4 Combine turkey with rice.
5 Cook, covered over low heat for 5 minutes or until the turkey is hot.
6 Serve hot.
