Rice And Turkey Skillet Curry

Ingredients
  Water 2 Cup (32 tbs)
  Converted rice 1 Cup (16 tbs) (UNCLE BEN'S Brand)
  Pineapple juice 6 Ounce (3/4 cup)
  Diced dried apricots 1⁄3 Cup (5.33 tbs)
  Dried cranberries 1⁄4 Cup (4 tbs)
  Curry powder 1 Teaspoon
  Cooked turkey 8 Ounce (1 1/2 cups)
Directions

MAKING
1 In a large skillet, bring water, rice, pineapple juice, apricots, cranberries and curry powder to a boil.
2 Cover and lower the heat.
3 Simmer for 15 minutes or until rice is tender and the liquid is absorbed.
4 Combine turkey with rice.
5 Cook, covered over low heat for 5 minutes or until the turkey is hot.

SERVING
6 Serve hot.
