Curry Glazed Pork Chops

Ingredients
  Pork chops 8 , cut 1/2 inch thick (rib or loin)
  Onion 1 Large, chopped to make 1 cup
  All purpose flour 2 Tablespoon
  Brown sugar 2 Tablespoon
  Curry powder 1 Tablespoon
  Salt 1 Teaspoon
  Ground cinnamon 1 Teaspoon
  Beef flavor bouillon cube/1 envelope instant beef bouillon 1
  Water 1 Cup (16 tbs)
  Catsup 2 Tablespoon
  Baby pack strained apples and apricots 4 Ounce (1 jar)
  Flaked coconut 1⁄4 Cup (4 tbs)
Directions

GETTING READY
1) Trim the excess fat from the chops.

MAKING
2) In a frying pan, add the chops and brown well.
3) Arrange in a single layer in a baking pan.
4) In the pan drippings, add the onion and saute till soft.
5) Blend in flour, brown sugar, curry powder, salt and cinnamon.
6) Cook, stirring constantly, till bubbly.
7) Stir in the bouillon cube, water, catsup, apples-and-apricots and coconut.
8) Stirring continuously, heat the mix till it boils.
9) Crush the bouillon cube, if required. Allow to simmer, uncovered, for 5 minutes, till the mix thickens.
10) Spoon half the mix over the chops.
11) Place in oven hot oven at 400° for 20 minutes.
12) Add the remaining sauce.
13) Bake for another 20 minutes till tender, and richly glazed.

SERVING
14) Serve with steamed rice.
