Turkey And Fruit Curry

Ingredients
  Butter/Margarine 3 Tablespoon
  Chopped onion 1 Cup (16 tbs)
  Curry powder 3 Teaspoon
  Tart apple 1 Large, pared, sliced
  All-purpose flour 1⁄4 Cup (4 tbs)
  Ground ginger 1⁄2 Teaspoon
  Salt 1 Teaspoon
  Pepper 1⁄4 Teaspoon
  Turkey broth/Chicken broth 2 1⁄2 Cup (40 tbs)
  Grated lime peel 2 Teaspoon
  Lime juice 2 Tablespoon
  Cooked turkey 3 Cup (48 tbs), cut into 1-inch pieces
  Bananas 2 , peeled, cut into 1/2 inch chunks
  Canned pineapple chunks in natural juices 8 Ounce, undrained
  White rice 1 1⁄4 Cup (20 tbs) (Use Hot)
Directions

MAKING
1. In a large skillet, tip in the 3 tablespoons of butter. Add the onions, curry powder and apple and sauté till they are tender. This will take five minutes
2. Remove from heat and add the flour, ginger, salt and pepper. Mix well till completely combined.
3. Stir in the Turkey broth, lime peel and juice and mix well
4. Bring to boiling and reduce heat to simmer. Cover and simmer again for 20 while stirring occasionally
5. Add the turkey, bananas and pineapple and heat again to boiling

SERVING
6. Serve hot over white rice with chutney on the side.
