Creamy Tomato Curry Dressing
|Tomato juice||1⁄3 Cup (5.33 tbs) (No Salt If Available)|
|Nonfat cottage cheese||1⁄3 Cup (5.33 tbs)|
|Lemon juice||1 Tablespoon|
|Curry powder||1 Teaspoon|
|Chopped tomato||1⁄4 Cup (4 tbs)|
1) In a blender or food processor, puree tomato juice, cottage cheese, lemon juice, honey and curry powder for about 45 seconds until smooth.
2) Stir in tomato and briefly process it, maintaining small pieces.
3) Keep in refrigerator for 15 minutes to allow chilling.
4) Use as required.
Store any remaining dressing in refrigerator in a covered container for future use.
