Thai Green Curry Paste

Ingredients
  Onion 1⁄2
  Galangal 2 Centimeter (2 Cm Piece)
  Garlic 2 Clove (10 gm)
  Ginger 5 Centimeter (5 Cm Piece)
  Green chili 5
  Turmeric 2 Centimeter (2 Cm Piece)
  Coriander 1 Bunch (100 gm)
  Thai basil 1 Bunch (100 gm)
  Kaffir lime leaves 5
  Green pepper 2 Teaspoon
  Lemon grass strand 1
Directions

Start by chopping garlic, onion, gallangal and ginger nice and small.
Place into mortar and pestle and grind together.
Chop and add tumeric and lemon grass. Add some salt and grind into paste with onion mix.
Add some shrimp paste now if you like.
Tear your kaffir lime leaves and basil in and give it a quick work.
Add your corriander roots and half of the leaves and grind them in.
And lastly your green peppercorns and work it all into a paste.
Add some salt and sugar as you go.
